Why is it so liquid ? In relation to other pure olive oils

First of all, thank you for sharing your opinion. You have correctly identified the high polyphenol content of our Sicilian extra virgin olive oil. As for your question, I wouldn’t describe our extra virgin olive oil as ‘liquid’ but rather as ‘fluid’. This is because, immediately after cold pressing, it is filtered to remove any residues that might form later and spoil the quality of the product. Unfiltered oils have a cloudy appearance precisely because they are ‘dirty’. I hope this has cleared up your doubts. Thank you very much.

Speedy, presentable and good quality. Slighty a bit more costly then I buy it from Ortigia but given the service and savings if I had to buy Maltese oil then I would say its perfect. Bravi e complimenti.
