thank you very much for your feedback, but we feel it is only fair to clarify a few things in full respect of your opinion and for the sake of fair information for those who read us. Regarding the colour, as ours is an artisanal extra virgin olive oil, it follows the normal natural process that leads from the initial intense green colour immediately after extraction to a green colour with golden highlights after a few months, in this case seven months. Regarding your definition of ‘acidulous’, it is fair to say that acidity, being a chemical-physical parameter, cannot be detected on the palate but only and exclusively through laboratory analysis (which we believe you have not done), so the description you gave does not seem appropriate to us. Finally, the filtration that we perform immediately after extraction preserves the oil from subsequent deterioration and bad smells that arise from residues that form at the bottom of the containers, drastically reducing the quality and life of the oil itself. This is why our oil is sold exclusively filtered. At this point we believe that our oil, recognised by thousands of customers as being of great quality, has not met with your approval simply because you may be used to consuming an oil with different characteristics.
